3 Garlic cloves crushed
0.75 cup Fresh cilantro coarsely chopped
0.75 cup Fresh parsley coarsely chopped
1 teaspoon Ground cumin
1 teaspoon Ground fenugreek
1 teaspoon Salt to taste, more if desired
1 cup Tahini
0.25 cup Fresh lemon juice
0.25 cup Mint if you want to experiment with this!

This is a real sauce for everything, really. The sauce pairs well with just about everything in your meal plan, whether you spoon it over dinner or serve it as a dipping sauce. My favorite way to use this sauce is as a topping for grain bowls. The herby freshness and pop of lemon are always a great complement to the smoky char of everything that comes off the grill, whether it’s meat, fish, or veggies. The coolness of the herbs also makes this sauce a good fit for spicy foods.

Pulse garlic, cilantro, parsley, cumin, fenugreek, and 2 teaspoons salt in a food processor until similar in texture to pesto. Add tahini and lemon juice; process 30 seconds (mixture will be very thick and gray).

With motor running, gradually drizzle in 3/4 cup water and process, adding more water to thin if needed, until sauce is light green and the consistency of sour cream. Season with salt.

Note :

Sauce can be made 6 hours ahead. Store tightly covered at room temperature. You may want to add some mint (chopped finely) and experience the difference!
