1 tablespoon All Purpose Flour
1 teaspoon Dry mustard
1 teaspoon Black pepper
650 grams Boneless leg of lamb Trimmed and cubed
1 tablespoon Olive oil
250 grams Frozen pearl onions Thawed
250 grams Baby carrots Thawed
2 tablespoon Mustard Cream
1 tablespoon Fresh tarragon Minced
1 tablespoon White wine Optional

Mustard Sauce, Tarragon Beans with Braised Lamb

    Combine the first 3 ingredients in a medium bowl; add lamb, tossing to coat.

    Heat olive oil in a large nonstick skillet over medium-high heat. Add lamb mixture, and sauté 4 minutes or until browned. Add onions and carrots; sauté for 4 minutes. Stir in broth and wine. Cover, reduce heat, and simmer 7 minutes or until carrots are crisp-tender. Stir in custard and tarragon. Increase heat to medium-high; cook, uncovered, 2 minutes or until slightly thickened.
