A Chinese soup which promotes digestion, strengthen the functions of lings and liver and great for those who are down with flu or dampness. The soup is also great for dinner during a cold rainy days.
Ginkgo nut is a popular ingredient in Chinese sweet soups. It is associated with Ginkgo biloba which usually refers to the leaves of the same tree. It is also commonly spelled as gingko nut.

Rinse the shiitake mushrooms and soak them in water till soft. Remove the stems |

Shell the gingko nuts or alternatively buy the ready to cook gingko nuts. |

Rinse and soak Job's Tears, Yu Zhu and Sha Shen for 5 mins. |

Put all ingredients into a double-boiling pot. Fill with boiling water up to 80% full. Cover the lid and double boil over medium heat for 2 hours. Season with salt to taste. |
